I did find another extant undercap, of the same structure as the one at the Met (that hsifeng.livejournal.com first brought to my attention.) Only it's displayed on a head form and I was right about it's structure. Win! I'll try to link to it a bit later.

Meantime, I have made the double chocolate cupcakes from the Miette cookbook - GF, by dint of using the Tom Sawyer GF AP flour. This is the best GF AP flour I've happened across as yet. They're decent. Better with the Almond Vanilla Swiss Buttercream frosting. I wanted to make French Buttercream, but didn't have enough eggs.
