Calligraphy and Illumination, baby, don't forget one of the most popular arts in the society ;) Gilding classes are popular, as are technique classes like whitework. Lyonnete's "How to make a fast scroll" class is awesome, but I doubt she'll be able to go to Chicago to teach it ;)
A class on dyes would be good; a lot of folks want to dye something in the course of their SCA careers ;)
