In honor of the Storm of the (Pick your period of time here), which is pulling barometer readings to rival a hurricane and would have come close to the Blizzard of '78 - had it been cold out....

I give you:



Churros:

(I'm providing a variant on the CIA recipe. I used the CIA flours. This is close:)

1/4 cup water
1/4 cup butter
6 Tbsp GF AP flour
1 Tbsp defatted soy flour
1 Tbsp guar gum
1/2 tsp salt
2 tsp sugar
4 eggs

In a small saucepan, bring water and butter to a boil. Add flours. Cook over high heat until mixture pulls together and starts to dry out, and bottom of pan is coated with white - about 1 minute. Place flour mixture into the bowl of a stand mixer with whisk attachment. Turn on and beat on high until mixture begins to cool. Beat in sugar and salt. Sprinkle in guar gum, gradually. Add the eggs, one at a time, and beat on high until choux comes together.

Spoon batter into a piping bag with a star tip. Fry in 375 degree oil until golden brown. Remove from oil. Roll in cinnamon sugar.

Chocolate (This is NOT hot cocoa. Not by any stretch. Gringos never get it right. :-/ I leave out the cinnamon if I'm dipping the churros - no reason to have it. I use the cinnamon if I'm just drinking (slurping?) it.

1 can sweetened condensed milk (I used Nestle's that is marketed in Latin America. I think the difference is tiny)
2 12 oz cans evaporated milk
vanilla bean
9 oz bittersweet chocolate (I used Ghiradelli double choc chips)
3 oz unsweetened chocolate (I used Guittard pastilles)
1/8 tsp cayenne pepper
1/4 c milk
1 Tbsp cornstarch
1/2 tsp cinnamon
Additional milk

Combine sweetened condensed and evaporated milks in a saucepan. Split the vanilla bean and add to milk. Scald the milk, stirring carefully. Remove from heat and take out bean. Add chocolates and whisk until smooth. Return to heat. Add cayenne and cinnamon if desired. In a small cup whisk 1/4 cup milk and cornstarch. Add to chocolate mixture in a steady stream. Cook until thickened.

At this point, you may need to dilute some with the milk. I should be drinkable, but thick - like a slightly melty milk shake.
